Not every morning do we get a chance to make a 'BIG' breakfast. It is usually a weekend deal. It is also more often than not a paleo breakfast. Paleo, in short meaning the way our ancestors ate. It has lots of animal protein and plant material. Here is one of my favorite paleo breakfasts.
Paleo Eggs and Gravy
serves 2
1 lb. breakfast sausage
4 Eggs (farm fresh if you ca get them)
2 heaping cups spinach or your favorite fresh greens
Gravy:
2 tbsp. real butter
2 tbsp. flour
1 cup organic milk or cream
1/8 tsp black pepper
1/8 tsp. onion powder
1/4 tsp. salt or to taste
2 tbsp. sour cream (optional)
Divide up the sausage into four patties. Cook until done. Set aside on a platter, covered to keep warm.
In a sauce pan over medium heat melt the butter. Add the flour and cook for about 2 minutes until all the butter and flour look like a paste. Slowly whisk in the milk and spices. Cook until thick and bubbly. Stir in sour cream.
Poach 4 eggs in boiling water.
Put one cup greens on each plate add cooked sausage patty. Top with 2 poached eggs. Ladle gravy over all. Serve with a side of bacon.
