Summer is always a fun time. Especially when I get to dig in the garden. Sometimes in the spring trying to get the gardens planned out and then planted can take some work and extra thought. I love my raised square foot garden beds ... because there are no rows to till. I fill the whole bed with garden goodness. But I have to make sure I do my homework on 'companion planting'. Sometimes a certain plant will just not grow good next to another certain plant for various reasons.
With such an over abundance of greens on a good year. That would be this year. You sometimes have to come up with creative ideas in which to save your bounty. I mean really, you can only have have so much room to blanch and freeze things. And even though we have a extra large freezer it seems to always have lots in it. I also can somethings. But really do not like to can anything green as it loses alot of vitamin goodness during the canning process. So I came up with a nice dry recipe using all my extra greens.

You will need a dehydrator. I just use a brand with the round trays. Have been using it for many years. It has dried countless hours worth of foods. Although one day I really will break down and get a Excalibur. Most people swear by them. I also used my trusty blender with the smoothie cup attachment as I wanted my greens to be as small and blended as possible.
This green goodness has 16 different items. Yes SIXTEEN! Yum. It smells and tastes just wonderful.
You can adjust any of the ingredients to your own liking. One of the best things about this "spice" is it is totally salt free. I did not add any salt so if you can make a salt free dish if you wish to do so.
This is also a great way to use up any dried stuff from last years bounty.
Dried Veggie Powder
Turnip Greens
Spinach
Beet Greens
Squash Blossoms
Onion (white/yellow)
Baby Kale
Sweet Peppers
Colored Carrots
Green Peppers
Parsley (flat leaf)
Broccoli
Celery
Red Pepper (hot)
Dill
Garlic
Green Carrot Tops
There is no measurements on each. I used what I had on hand and worked each batch that came from the dehydrator as it dried. I also added some jars of dried kale, peppers, celery from last year.
This tastes great in any soup, stew casserole or just sprinkled on eggs and roasted veggies. A great way to add more greens to your diet as well as great flavor!
