I love pizza! I love a good pizza. We, like so many others, have our favorite pizza places, and our not so favorite. Either way, I always feel guilty after downing a meal of crusty bread, gooey chees and greasy meats. So I decided it was time for a pizza make over! The crust is actually my oat/flaxseed bread recipe. The crust is what I fear most when eating pizza. I always envision a big pile of flour and water..ugh.
I like to incorporate fiber and healthy ingredients in places where they actually should be. Pizza crust, and bread for that matter, shouldn`t just be refined flour and water. We need something good for our bodies seeings it is the crust we fill up on the most. Although I do love a very thin and crispy crust from time to time. This crust left me feeling full but happy I fed my body something good. It also tasted absolutely delish! You would ever know it had some great things in it.

Just remember when you brush on the olive oil to not oil the outer crust so it will brown with the rest of your Italian goodness.
Pizza sauce is one of the key things gives a pizza its signature. Every sauce is different and it is what brings together the top (cheese) and bottom (crust) its what makes your pizza YOUR pizza! This recipe I started with tomato powder. Yes! Powder. I buy it by the 10# can. I have tried many ways to make pizza sauce and this was the absolute best. Although you could use tomato paste from those little cans at the store.
When adding cheese don't be stingy. Also use real cheese and grate it yourself. We get ours from the local co-op. It is raw milk and tangy! Melts like no other cheese.
Pizza recipe
Dough:
2 ½ to 3 cups flour
1 cup oat flour (6-7 Tbsp whole oatmeal)
1 Tbsp. flax seed
1 tsp. salt
2 tsp. bread yeast
1 Tbsp. raw sugar or honey
2 Tbsp. olive oil
1 ¼ cup warm water
Preheat oven to 425 degrees.
Grind oatmeal and flax seed in coffee grinder. It should equal about a cup.
Add yeast, sugar and oil to warm water. Let proof.
Add flour oatmeal/flaxseed and salt together. I use my Ninja mixer and mix on the dough cycle.. you can do the mixing/kneading by hand also. Dump in the water/yeast mixer. Mix/knead till a soft dough forms. Add flour a sprinkle at a time if to moist or water a tsp at a time if to dry. Coat in oil and set in boil covered with plastic wrap till double in size. Punch down and divide in half. Let rest 10 minutes. Roll out into two crusts.
Brush just the center with olive oil .. not the outside crust or it wont brown crispy.
Sauce:
2 6 oz. cans tomato paste (I use tomato powder and mix with water to make a paste)
Garlic powder
Onion powder
Italian seasoning or oregano
Salt
1 Tbsp. parmesan cheese
Red pepper flakes if you want some heat.
Mix all ingredients well and let sit for 30 minutes to come together.
Add raw milk cheese and pepperonis or what ever toppings you want. Bake 425 degrees for about 15-20 minutes or until done.
