There really is nothing like biting into a yummy soft flour tortilla filled with loads of spicy meat, fresh vegetables and your favorite sauce. I love soft tortillas as most do. But we don`t always have them around. It is one of those items you buy when you plan that special Mexican meal..and when they`re gone they are gone.
Making homemade flour tortillas is easier than you think. AND you can use your favorite ingredients. I use coconut oil here. We don`t use vegetable oils in our house. Coconut oil made these so soft and yummy!
Don`t worry if they are not rolled into a perfect circle either. That is what makes home cooked foods so special. When they looked home cooked.
Coconut Oil Tortillas
3 cups flour
1 teaspoon salt
1 teaspoon baking powder
⅓ cup coconut oil
1 cup warm water
Put flour, salt and baking soda into your mixer. Using the dough setting, mix or pulse the dry ingredients just so they are incorporated together. Slowly add the melted coconut oil and water interchanging until both are incorporated while pulsing the mixer. Run the mixer in short bursts until a dough ball forms. Once the dough has formed take out of mixer and lay dough ball on well-floured counter. Cut in half. Cut each half in half. Keep doing this until you have 16 equal dough balls. Roll out as thin as possible with a rolling pin.
Heat fry pan to med high heat. Fry each tortilla until you have small light brown spots. About a minute. Turn and do the other side. Keep tortillas covered to stay warm while you are frying the rest.
