I really think healthy eating is something we should all partake in. But sometimes we just want that old favorite when the right ingredients are bountiful, like zucchini. I have always love zucchini bread. But in the past 10 yrs or so have tried to avoid it because of all the bad fat and sugar. I decided it was time for a zucchini bread makeover.
I made this from what I had available in my kitchen as this was a last minute idea. I picked a handful of zucchini from my gardens in the a.m. so all I needed was to add ingredients that not only taste great but are better for you than their counterparts.

Zucchini Oat Bread
2 eggs
¼ C. coconut oil
¼ C. olive oil
1/4 C. sugar in the raw or organic sucanat (any raw or organic sugar will work)
¼ C. raw honey
5 tbsp. organic oats (ground into flour)
1 tbsp. flax seed (ground)
¾ C. flour
1/8 tsp. baking powder
1 tsp. baking soda
1 packed Cup shredded zucchini or about 1 med (drained)
2 tbsp. pepitas (coarsely chopped) (you can use any type nuts here also)
2 tsp. cinnamon
4 tsp. maca powder (optional)
4 tsp. hemp seed (optional)
1 apple shredded with peel.
pinch of salt
Put oats and flax seed into clean coffee grinder. Grind to flour. Shred zucchini let drain while mixing everything else. Mix everything well in large mixing bowl.
If you don`t have Maca powder or hemp seeds you can omit this.. it will not change the flavor or texture at all. Also any type nuts will work in this recipe.
Spray 5 x 9 loaf pan. I also put a piece of parchment paper at bottom so doesn’t stick.
Bake 375 degrees 55-60 minutes or until done.
